First Prize Chocolate Cake

½ - cup butter or margarine
4 - (1 oz.) squares bitter chocolate
2 - eggs
2 - cups buttermilk
2 - teaspoons vanilla extract
2 ½ - cups sifted self-rising flour
1- teaspoon soda
2 - cups sugar

Preheat oven to 350 degrees. Grease and lightly flour two 8-inch square cake pans. Melt butter or margarine with chocolate squares together over low heat or in a double boiler. Cool. Beat eggs until frothy, about two minutes. Add buttermilk and vanilla extract. Sift flour, soda, and sugar. Blend dry ingredients into buttermilk mixture, and then stir in melted chocolate mixture. Pour batter into prepared pans and bake about 30 minutes. Cool and frost layered cake with Dark Chocolate Frosting.




Dark Chocolate Frosting


½ - cup butter or margarine
4 - (1 oz.) squares bitter chocolate
1 - pound of confectioner's sugar, sifted
¼ - teaspoon salt
½ - cup evaporated milk (Do not Dilute)
2 - teaspoons vanilla extract

Melt butter or margarine with chocolate squares together over low heat or in a double boiler. Stir sugar into chocolate mixture. Add salt, milk, and vanilla extract. Beat until smooth. Makes enough to frost (2) two 8 to 9 inch layers.
