Crab Cakes
- 1 pound eastern crab meat, flaked, or 3 packages (6 oz.) frozen crab, thawed and flaked
- ¼ cup mayonnaise
- 1 egg
- 1 tablespoon chopped parsley
- 2 teaspoons Worcestershire
- 2 drops hot pepper sauce
- ½ teaspoons dry mustard
- ¼ teaspoon salt
- 1/8-teaspoon pepper
- 2 cups soft breadcrumbs
- ½ cup oil
Pick over crabmeat, discarding cartilage, set aside. Mix mayonnaise, egg, parsley, Worcestershire sauce, pepper sauce,
mustard, salt and pepper. Add crabmeat and 1-cup breadcrumbs; mix well. Shape in 8 patties and coat with remaining 1-cup
crumbs. Fry in hot oil until golden brown, turning once.
