Fried Chicken

1 broiler-fryer (2 - ½ to 3 lbs.) cut up
Salt and pepper to taste
Flour
Oil

Sprinkle chicken with salt and pepper; coat with flour. In large skillet heat ½ inch oil (about 2 ½ cups) over medium high heat to about 400 degrees. Add chicken, placing large pieces in center. Fry 10 minutes or until crisp and golden; cover and cook 5 minutes longer. Turn chicken, reduce heat to medium, cover and cook 10 minutes. Uncover and cook 5 minutes to crisp. Remove chicken and drain on paper towels. Makes 4 servings. Note: To make gravy, pour off all but about ¼ cup oil and brown bits in pan. Stir ¼ cup flour into pan drippings and cook and stir until lightly browned. Stir in 3 cups water or milk gradually and cook and stir until thickened and smooth. Season to taste with salt and pepper. Makes about 3 cups. Serve with rice or mashed potatoes.
