Hot Water Cornbread
- 2 cups cornmeal, approx.
- 2 tablespoons flour
- 1-teaspoon baking powder
- 1-teaspoon salt
- 1/8-teaspoon cayenne pepper
- Boiling hot water
Pour boiling water into dry mixture. Wet hands in cold water and make small pones or patties and fry in moderate
amount of heated cooking oil in skillet. Turn once, but brown well. Drain on paper towels to rid of excess fat.
Delicious with any vegetables or soup, hot or cold.
