Pumpkin Bread
- 4 cups sugar
- 1 ½ cup oil
- 4 cups pumpkin, canned
- 3 eggs
- 1-cup nuts, chopped
- 1 (8 oz.) pkgs. Dates, chopped
- 5 cups flour
- 2-½ teaspoon soda
- 2-teaspoon cinnamon
- 1-teaspoon salt
- 1-teaspoon allspice and cloves
- 1-teaspoon vanilla extract
Cream sugar with oil, add canned pumpkin and mix well. Add eggs one at a time. Sift flour, soda, salt and spices
together and add to cream mixture. Fold in the chopped nuts, dates and vanilla extract. Bake in a loaf pan at 325 degrees for
about one hour. Cool before removing from pan.
